The Peace Corps Oven, Unplugged
Think banana bread. Think brownies. Think personal pizzas. Think big. It‘s time to take culinary life by the horns and make your own Peace Corps oven. All you really need is a steady source of heat, some empty Salsa (tomato paste) cans, a small lidded pot, and a big lidded pot.
The concept is similar to that of nesting dolls: a baby pot within a mama pot. Line the big pot with water (there‘s a rumor that sand works, too) to prevent scorching. Elevate the smaller pot with empty Salsa cans so that heat can freely circulate around the dish you‘re cooking. Enamelware works quite well as a baking dish, and muffin tins are available at T2000.
